- 2 tablespoons olive oil
- 1 lb (450g) chicken breast, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until no longer pink in the center.
- Add the chopped onion and cook until translucent. Stir in the minced garlic and cook for an additional minute.
- Pour in the diced tomatoes and heavy cream, stirring to combine.
- Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and the sauce is smooth.
- Add the cooked spaghetti to the skillet and toss to coat in the cheese sauce.
- Season with dried basil, oregano, salt, and pepper.
- Garnish with fresh basil or parsley before serving.
Notes
