  • 2 garlic cloves, peeled and roughly chopped

  • 7 oz (200g) cherry tomatoes, roughly chopped

  • 1 handful of fresh spinach

  • 2 tablespoons tomato puree

  • 1 teaspoon paprika

  • ½ teaspoon cayenne pepper

  • 1 tablespoon olive oil

  • ½ teaspoon chili flakes

  • ½ teaspoon black pepper

  • 23 large tortillas

  • 1 cup shredded mozzarella cheese

  • 1 tablespoon sour cream (optional, for extra creaminess)


Instructions

  • Cook the Pasta: Begin by boiling the pasta according to the package instructions. Drain and set aside.

  • Prepare the Sausage: Heat the olive oil in a large skillet over medium-high heat. Add the sausage meat and cook, breaking it up into crumbles with a spatula, until browned and cooked through (about 6-8 minutes).

  • Add the Garlic and Tomatoes: Add the garlic to the skillet and sauté for 1-2 minutes, then stir in the chopped tomatoes. Cook for another 2-3 minutes until the tomatoes soften and release their juices.

  • Season the Mixture: Add the tomato puree, paprika, cayenne pepper, chili flakes, and black pepper. Stir well to combine. Let the mixture simmer for 3-5 minutes, allowing the flavors to meld.

  • Add Spinach: Stir in the fresh spinach and let it wilt into the sauce, which should take about 2 minutes.

  • Combine with Pasta: Add the cooked pasta to the skillet and mix until the pasta is evenly coated with the sausage and sauce mixture. Adjust seasoning to taste.

  • Assemble the Wraps: Lay the tortillas flat on a clean surface. Spoon the sausage pasta mixture into the center of each tortilla, then sprinkle with shredded mozzarella cheese. If desired, add a spoonful of sour cream for added creaminess.
