For the Hot Dogs:

  • 4 hot dog sausages
  • 4 hot dog buns
  • 1 cup shredded cheddar cheese
  • 1 tablespoon vegetable oil

For the Pickle Mustard Sauce:

  • 1/4 cup Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon pickle juice
  • 1/4 cup finely chopped dill pickles
  • 1 tablespoon honey
  • Salt and pepper, to taste

For the Crispy Onions:

  • 1 cup thinly sliced onions
  • 1/2 cup all-purpose flour
  • 1/4 cup buttermilk
  • Vegetable oil, for frying
  • Salt, to taste

Instructions

  • Prepare the Hot Dogs:
    • Preheat a grill or stovetop skillet over medium heat.
    • Brush the hot dog sausages with vegetable oil and grill or cook in the skillet, turning occasionally, until heated through and slightly charred.
    • During the last few minutes of cooking, sprinkle shredded cheddar cheese over the hot dogs and cover to melt the cheese.
  • Make the Pickle Mustard Sauce:
    • In a small bowl, combine Dijon mustard, mayonnaise, pickle juice, chopped dill pickles, honey, salt, and pepper.
    • Mix until smooth and well combined. Adjust seasoning to taste.
  • Make the Crispy Onions:
    • Heat vegetable oil in a large skillet over medium-high heat.
    • In a bowl, dip the sliced onions in buttermilk, then coat with flour.
    • Fry the onions in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels and season with salt.
  • Assemble the Hot Dogs:
    • Place the cheesy hot dogs into the buns.
    • Drizzle with the pickle mustard sauce.
    • Top with crispy onions.

Notes

For extra flavor, try adding your favorite hot dog toppings like sauerkraut or relish. The crispy onions can be made ahead and stored in an airtight container.
