For the Hot Dogs:

  • 4 hot dogs
  • 4 hot dog buns
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

For the Pickle Mustard Sauce:

  • 1/4 cup Dijon mustard
  • 2 tablespoons mayonnaise
  • 2 tablespoons finely chopped pickles
  • 1 teaspoon pickle juice (optional, for extra tang)
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

For the Crispy Onions:

  • 1 cup thinly sliced onions
  • 1/2 cup all-purpose flour
  • 1/2 cup buttermilk
  • Vegetable oil for frying
  • Salt, to taste

Instructions

  • Prepare the Hot Dogs:
    Preheat your grill or stovetop grill pan over medium heat. Brush the hot dogs with olive oil and grill for 5-7 minutes, turning occasionally, until heated through and slightly charred.
  • Add Cheese:
    While the hot dogs are grilling, sprinkle shredded cheddar cheese over the hot dogs during the last 2 minutes of cooking, allowing the cheese to melt.
  • Make the Pickle Mustard Sauce:
    In a small bowl, mix together Dijon mustard, mayonnaise, finely chopped pickles, pickle juice (if using), honey, garlic powder, salt, and pepper. Stir until well combined. Adjust seasoning to taste.
  • Prepare the Crispy Onions:
    In a bowl, soak the thinly sliced onions in buttermilk for about 10 minutes. Drain the onions and dredge them in flour, shaking off any excess.
  • Fry the Onions:
    In a skillet, heat vegetable oil over medium heat. Fry the coated onions in batches until golden brown and crispy, about 2-3 minutes per batch. Remove from the oil and drain on paper towels. Season with salt while still hot.
  • Assemble the Hot Dogs:
    Place the grilled hot dogs in the buns. Drizzle generously with the pickle mustard sauce and top with crispy onions.
  • Serve:
    Enjoy these cheesy, tangy, and crispy hot dogs with your favorite side dishes!

Notes

For a spicier kick, add a dash of hot sauce to the pickle mustard sauce. If you prefer baked crispy onions, spread them on a baking sheet and bake at 375°F (190°C) for 15-20 minutes, stirring occasionally.
