Crispy on the outside and soft on the inside, these oven-roasted potatoes are tossed with ranch seasoning and topped with melted cheddar cheese. A simple, flavorful side dish that’s sure to please everyone at the table!


Ingredients

  • 4 large potatoes, diced
  • 1/4 cup olive oil
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the diced potatoes with olive oil and ranch seasoning mix until evenly coated.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes, or until potatoes are golden brown and crispy.
  • Sprinkle shredded cheddar cheese over the roasted potatoes and return to the oven for 5 more minutes, or until cheese is melted.
  • Season with salt and pepper to taste before serving.

Notes

  • You can customize the seasoning by adding garlic powder or onion powder for extra flavor.
  • For a different cheese flavor, try using mozzarella or Monterey Jack instead of cheddar.
  • Make sure to toss the potatoes halfway through roasting to ensure even crispness.
