- 1/4 cup olive oil
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced potatoes with olive oil and ranch seasoning mix until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until potatoes are golden brown and crispy.
- Sprinkle shredded cheddar cheese over the roasted potatoes and return to the oven for 5 more minutes, or until cheese is melted.
- Season with salt and pepper to taste before serving.
