Enjoy a fun and flavorful twist on classic meatloaf with these cheesy stuffed meatloaf bites. Perfect as appetizers, snacks, or part of a main meal!

For the Meatloaf:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste

For the Cheese Filling:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

For the Glaze:

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  • Prepare the Meatloaf Mixture:
    In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, chopped onion, milk, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined.
  • Stuff the Meatloaf Bites:
    Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with paper liners. Take small portions of the meatloaf mixture and flatten them in the palm of your hand. Place about 1 tablespoon of shredded mozzarella and cheddar cheese in the center of each portion, then fold the meat around the cheese to form a ball. Place each meatball into the muffin tin.
  • Prepare the Glaze:
    In a small bowl, mix together the ketchup, brown sugar, and Worcestershire sauce. Spoon a small amount of the glaze over each meatloaf bite.
  • Bake the Meatloaf Bites:
    Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the cheese is melted and bubbly. The internal temperature should reach 160°F (71°C).
  • Serve:
    Allow the meatloaf bites to cool for a few minutes before serving. They are great as an appetizer, snack, or part of a main meal!
