Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • ½ cup chopped dried cherries
  • ½ cup sliced almonds, toasted
  • ½ cup coarse sugar (optional, for topping)

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, and almond extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Stir in chopped cherries and almonds.
  • Scoop dough onto the prepared baking sheet, about 1 inch apart. Flatten slightly with the back of a spoon and sprinkle with coarse sugar if desired.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
