Description

These Cherry Cupcakes are soft, fluffy, and bursting with fresh cherry flavor. With a light vanilla base and chopped cherries folded in, they make for a sweet treat perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 cup chopped cherries

Instructions

  • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually mix in the dry ingredients, alternating with the milk.
  • Gently fold in the chopped cherries.
  • Divide the batter into the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Allow the cupcakes to cool before frosting.

Notes

These cupcakes can be topped with whipped cream or your favorite frosting. For extra cherry flavor, consider adding a cherry on top or incorporating a cherry filling.
