A refreshing and healthy dessert made with vibrant pomegranate, fresh raspberries, and nutrient-packed chia seeds. This layered treat is perfect for a light yet satisfying sweet bite, with a touch of natural sweetness from honey or maple syrup.

  • 1 cup fresh raspberries
  • 1 tablespoon pomegranate juice
  • 1 tablespoon honey or maple syrup

For the Chia Layer:

  • 1 cup unsweetened almond milk
  • 1/4 cup chia seeds
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

For the Topping:

  • 1/2 cup pomegranate seeds
  • Fresh raspberries (for garnish)
  • Mint leaves (for garnish)

Instructions

  • Prepare the base:
    In a blender or food processor, combine fresh raspberries, pomegranate juice, and honey (or maple syrup). Blend until smooth.
  • Make the chia layer:
    In a mixing bowl, whisk together unsweetened almond milk, chia seeds, honey (or maple syrup), and vanilla extract. Let it sit for about 5 minutes, then stir to ensure chia seeds are evenly distributed.
  • Assemble the dessert:
    Layer the raspberry-pomegranate mixture at the bottom of serving glasses or bowls. Then, top with the chia layer.
  • Chill:
    Refrigerate the desserts for at least 2 hours, or until the chia pudding has thickened.
  • Add toppings:
    Before serving, garnish with pomegranate seeds, fresh raspberries, and mint leaves.

Notes

  • If you prefer a vegan version, simply use maple syrup instead of honey.
