Instructions
- Prepare the base:
In a blender or food processor, combine fresh raspberries, pomegranate juice, and honey (or maple syrup). Blend until smooth. - Make the chia layer:
In a mixing bowl, whisk together unsweetened almond milk, chia seeds, honey (or maple syrup), and vanilla extract. Let it sit for about 5 minutes, then stir to ensure chia seeds are evenly distributed. - Assemble the dessert:
Layer the raspberry-pomegranate mixture at the bottom of serving glasses or bowls. Then, top with the chia layer. - Chill:
Refrigerate the desserts for at least 2 hours, or until the chia pudding has thickened. - Add toppings:
