Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes. Remove bacon and set it aside, leaving the bacon drippings in the pot.
- Add the chopped onion, carrots, and celery to the pot and cook, stirring occasionally, until softened, about 5-7 minutes.
- Add the garlic and cook for another 1-2 minutes until fragrant.
- Stir in the shredded chicken breast, dried thyme, salt, and pepper. Cook for a minute to combine the flavors.
- Pour in the chicken broth and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.
- Stir in the heavy cream and bring the soup back to a gentle simmer.
- Add the gnocchi and cook according to the package instructions, typically 2-3 minutes or until they float to the top.
- Stir in the baby spinach and cook until wilted, about 2 minutes.
- Remove the soup from heat and stir in the grated Parmesan cheese until melted and smooth.
- Serve hot, topped with the crispy bacon and extra Parmesan if desired.
