Description
Chicken and Broccoli Pasta is a creamy, comforting dish filled with tender chicken, vibrant broccoli, and perfectly cooked pasta. The creamy Parmesan sauce ties everything together, making it an easy weeknight dinner that’s both satisfying and flavorful.
Ingredients
-
2 boneless, skinless chicken breasts, diced
-
2 cups broccoli florets (steamed or blanched)
-
3 cups cooked pasta (penne, rotini, or spaghetti work well)
-
3 tablespoons olive oil
-
3 cloves garlic, minced
-
½ cup grated Parmesan cheese
-
1 cup heavy cream (or half-and-half for a lighter version)
-
Salt and pepper, to taste
-
¼ teaspoon red pepper flakes (optional for heat)
-
Fresh parsley (optional, for garnish)
Instructions
-
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
-
Add the diced chicken and season with salt and pepper. Cook for 5-7 minutes, or until the chicken is fully cooked through and no longer pink. Remove the chicken from the skillet and set it aside.
-
In the same skillet, add another tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute.
-
Add the steamed or blanched broccoli to the skillet and cook for 2-3 minutes.
-
Add the cooked pasta, heavy cream, and Parmesan cheese to the skillet, stirring to combine. Let the sauce simmer and thicken for about 3-4 minutes.
-
Return the cooked chicken to the skillet and stir everything together. Cook for another 2-3 minutes, ensuring everything is heated through and coated in the creamy sauce.
-
Season with salt, pepper, and red pepper flakes (if using).
-
Garnish with fresh parsley and serve hot.
Notes
-
You can use any type of pasta you prefer; penne or rotini works best for holding the creamy sauce.
-
For a lighter version, substitute half-and-half for the heavy cream.
-
This dish pairs well with a side of garlic bread or a light salad.
