Description

Crispy, tender chicken breasts coated in a Parmesan panko crust, layered with fresh Romaine, creamy lemon Caesar dressing, and ripe avocado inside buttery croissants. This sandwich is a flavorful twist on the classic Caesar salad, perfect for a satisfying lunch or dinner.

For the chicken:

  • 2 boneless skinless chicken breasts (about 1 ½ lbs)

  • Kosher salt and black pepper, for seasoning

  • ½ cup all-purpose flour

  • 1 teaspoon garlic powder

  • 3 large eggs

  • 1 cup panko bread crumbs

  • ¼ cup freshly grated Parmesan cheese

For the creamy lemon dressing:

  • ½ cup plain Greek yogurt

  • 2 tablespoons lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • 1 clove garlic, minced

  • Kosher salt and pepper, to taste

For the sandwiches:

  • 4 croissants

  • 2 tablespoons melted butter

  • ¾ cup Parmesan cheese, divided

  • 4 cups chopped Romaine lettuce

  • 2 avocados, sliced

  • Hot honey, for drizzling (optional)


Instructions

  • Preheat oven to 375°F (190°C).

  • Season chicken breasts with salt and pepper. In one bowl, mix flour and garlic powder. In a second bowl, whisk eggs. In a third bowl, combine panko and Parmesan cheese.

  • Coat chicken breasts in flour mixture, then dip into eggs, then dredge in panko-Parmesan mixture.

  • Heat a skillet over medium heat with a little oil and sear chicken until golden on both sides, about 3-4 minutes per side. Transfer to a baking sheet and bake for 15-20 minutes, or until cooked through.

  • Meanwhile, whisk together Greek yogurt, lemon juice, Dijon mustard, honey, garlic, salt, and pepper to make the creamy lemon dressing.

  • Slice croissants in half and brush cut sides with melted butter. Sprinkle with half of the Parmesan cheese and toast under the broiler until golden and crispy.

  • Assemble sandwiches by layering chopped Romaine, sliced avocado, chicken breast, and a generous drizzle of the lemon dressing. Top with remaining Parmesan and optional hot honey drizzle. Close sandwiches and serve.

Notes

For a spicy kick, add a dash of cayenne to the panko mixture. Use store-bought Caesar dressing if preferred. Serve with a side salad or chips.
