Ingredients
For the chicken:

For the sandwiches:

Instructions

Preheat oven to 375°F (190°C).

Season chicken breasts with salt and pepper. In one bowl, mix flour and garlic powder. In a second bowl, whisk eggs. In a third bowl, combine panko and Parmesan cheese.

Coat chicken breasts in flour mixture, then dip into eggs, then dredge in panko-Parmesan mixture.

Heat a skillet over medium heat with a little oil and sear chicken until golden on both sides, about 3-4 minutes per side. Transfer to a baking sheet and bake for 15-20 minutes, or until cooked through.

Meanwhile, whisk together Greek yogurt, lemon juice, Dijon mustard, honey, garlic, salt, and pepper to make the creamy lemon dressing.

Slice croissants in half and brush cut sides with melted butter. Sprinkle with half of the Parmesan cheese and toast under the broiler until golden and crispy.

Notes
For a spicy kick, add a dash of cayenne to the panko mixture. Use store-bought Caesar dressing if preferred. Serve with a side salad or chips.
