Description

This vibrant and flavorful Chicken Fajita Burrito Bowl combines tender, seasoned chicken with bell peppers, onions, and a variety of spices. Served over cilantro lime rice and topped with black beans, fresh lettuce, pico de gallo, and chipotle aioli, this bowl is the perfect balance of savory, smoky, and fresh flavors.

For the Chicken and Veggies:

  • 1 ½ pounds chicken breast

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1 ¼ teaspoons garlic powder

  • 1 ¼ teaspoons cumin

  • 1 teaspoon brown sugar

  • 1 teaspoon oregano

  • 1 ½ teaspoons chili powder

  • 3 teaspoons paprika

  • 1 tablespoon tapioca starch

  • 3 bell peppers (any color)

  • ½ large red onion

For Serving:

  • 2 cups cilantro lime rice

  • 1 can black beans (drained and rinsed)

  • 2 cups chopped lettuce

  • ½ cup pico de gallo

  • ½ cup chipotle aioli


Instructions

  • Season the Chicken:

    • In a small bowl, combine the salt, garlic powder, cumin, brown sugar, oregano, chili powder, paprika, and tapioca starch.

    • Rub the chicken breasts with 1 tablespoon of olive oil, then coat them with the seasoning mix. Set aside for 10-15 minutes to marinate.

  • Cook the Chicken:

    • Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.

    • Add the chicken breasts and cook for about 6-7 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).

    • Remove from heat and let the chicken rest for a few minutes before slicing it into thin strips.

  • Cook the Veggies:

    • While the chicken cooks, slice the bell peppers and red onion into thin strips.

    • In the same skillet used for the chicken, add the sliced vegetables and sauté for 3-4 minutes until they are tender and slightly caramelized. Remove from heat.

  • Prepare the Cilantro Lime Rice:

    • If using pre-made rice, reheat the cilantro lime rice. If cooking fresh, prepare the rice according to the package instructions, and stir in lime juice and freshly chopped cilantro when done.

  • Assemble the Bowl:

    • In each serving bowl, layer the cilantro lime rice, black beans, chopped lettuce, and sliced chicken.

    • Top with sautéed bell peppers and onions, a spoonful of pico de gallo, and a drizzle of chipotle aioli.

 

  • Serve:

    • Garnish with additional cilantro or lime wedges if desired, and serve immediately.

Notes

  • For a lower-carb option, you can substitute the rice with cauliflower rice or skip the rice altogether.

  • Adjust the level of spice by using more or less chili powder and chipotle aioli.

  • You can also add avocado slices for extra creaminess and flavor.
