    • 3 cups frozen hash browns, thawed slightly (about 8 ounces)

    • 23 cups cooked chicken, diced

    • ¼ cup bacon bits

    • 1 cup shredded cheddar cheese

    • 1 (10.5-ounce) can condensed cream of chicken soup

    • ½ cup milk

    • 12 ounces frozen mixed vegetables, thawed slightly

    • ⅛ teaspoon dried thyme

For the Topping:

    • 1214 Ritz crackers (about half a sleeve), crushed

    • ½ cup shredded cheddar cheese


Instructions

  • Preheat your oven to 350°F (175°C).

  • In a large mixing bowl, combine the thawed hash browns, cooked chicken, bacon bits, shredded cheddar cheese, cream of chicken soup, milk, mixed vegetables, and dried thyme. Stir until everything is well combined.

  • Transfer the mixture into a greased 9×13-inch baking dish, spreading it out evenly.

  • In a small bowl, mix the crushed Ritz crackers and ½ cup shredded cheddar cheese. Sprinkle the mixture over the casserole for a crispy topping.

  • Bake for 30-40 minutes, or until the casserole is hot and bubbly, and the top is golden brown.
