Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add onion, carrots, and celery. Cook until vegetables are tender, about 5-7 minutes.
  • Pour in chicken broth and bring to a boil.
  • Add shredded chicken, egg noodles, thyme, salt, and pepper.
  • Reduce heat and simmer for 20 minutes, or until the noodles are tender.

Notes

  • You can use rotisserie chicken for a quicker option.
  • Feel free to add more herbs like parsley or rosemary for additional flavor.
