Description

Chicken Noodle Stir Fry is a quick, flavorful, and colorful one-pan meal combining tender chicken breast, vibrant vegetables, and savory egg noodles tossed in a simple yet delicious soy-based sauce. Ready in under 30 minutes, it’s perfect for busy weeknights or anytime you want a nutritious, hearty dish with minimal cleanup and flexible ingredient options.

Ingredients

Scale

Protein

  • 1 lb skinless, boneless chicken breast, thinly sliced

Noodles

  • 8 oz egg noodles

Vegetables

  • 1 bell pepper, sliced
  • 2 medium carrots, thinly sliced
  • 3 green onions, sliced (plus extra for garnish)

Sauce & Aromatics

  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • Optional: 1/4 tsp chili flakes

Instructions

  1. Prep Your Ingredients: Slice the chicken into thin strips for quick cooking. Chop bell peppers and carrots uniformly to ensure even cooking. Mince the garlic and ginger to release their flavors thoroughly during cooking. Boil the egg noodles according to package instructions, drain, and set aside.
  2. Cook the Chicken: Heat vegetable oil in a large wok or skillet over medium-high heat. Add the chicken strips and stir-fry until golden brown and cooked through, about 4-5 minutes. Remove the chicken and set aside to keep it juicy.
  3. Stir Fry Vegetables: In the same pan, add more oil if needed, then add minced garlic and ginger, frying just until fragrant. Quickly add the sliced carrots and bell peppers, stir-frying until crisp-tender to maintain vibrant color and crunch.
  4. Combine and Sauce: Return the cooked chicken to the pan and add the drained noodles. Pour the soy sauce and drizzle sesame oil over all ingredients. Toss well to evenly coat everything in the sauce and warm through for 1-2 minutes.
  5. Finish and Serve: Remove from heat and sprinkle sliced green onions and optional chili flakes on top for brightness and a spicy kick. Serve immediately to enjoy the best texture and freshness.

Notes

  • Prep all ingredients before starting to keep cooking quick and seamless.
  • Use a hot pan to sear chicken and vegetables without steaming them.
  • Cook in batches if needed to avoid overcrowding for better texture.
  • Day-old noodles work best as they hold together and absorb sauce well.
  • Adjust soy sauce quantity to taste to avoid over-salting.
