This hearty and flavorful Three-Cheese Chicken Parmesan features perfectly breaded chicken breasts, sautéed bell peppers, and a melty combination of mozzarella, provolone, and Parmesan cheeses. It’s a comforting twist on the classic with fresh basil for a burst of flavor. Gluten-free and dairy-free options available.

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1 cup all-purpose flour (or gluten-free flour for a gluten-free option)
  • 2 large eggs, beaten
  • 1 1/2 cups Italian breadcrumbs (or gluten-free breadcrumbs for a gluten-free option)
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/2 cup olive oil
  • 1 cup marinara sauce
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper on both sides.
  • Set up a breading station: Place the flour in a shallow dish, the beaten eggs in another dish, and a mixture of breadcrumbs and Parmesan in a third dish.
  • Dredge each chicken breast first in flour, then dip in the beaten eggs, and finally coat with the breadcrumb-Parmesan mixture.
  • Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 3-4 minutes per side, until golden brown and crispy. Transfer to a baking dish.
  • In the same skillet, sauté the red and yellow bell peppers for about 2-3 minutes, until tender. Spoon the sautéed peppers over the chicken breasts.
  • Spoon marinara sauce over the peppers and chicken, then top with shredded mozzarella, provolone, and additional Parmesan cheese.
  • Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).
  • Garnish with fresh basil, if desired, and serve immediately.

Notes

  • For a gluten-free option, replace the all-purpose flour with gluten-free flour and use gluten-free breadcrumbs.
  • Use dairy-free versions of mozzarella, provolone, and Parmesan if you need a dairy-free option.
