- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 1 cup all-purpose flour (or gluten-free flour for a gluten-free option)
- 2 large eggs, beaten
- 1 1/2 cups Italian breadcrumbs (or gluten-free breadcrumbs for a gluten-free option)
- 1/2 cup grated Parmesan cheese, plus more for topping
- 1/2 cup olive oil
- 1 cup marinara sauce
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded provolone cheese
- 1 tablespoon fresh basil, chopped (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- Set up a breading station: Place the flour in a shallow dish, the beaten eggs in another dish, and a mixture of breadcrumbs and Parmesan in a third dish.
- Dredge each chicken breast first in flour, then dip in the beaten eggs, and finally coat with the breadcrumb-Parmesan mixture.
- Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 3-4 minutes per side, until golden brown and crispy. Transfer to a baking dish.
- In the same skillet, sauté the red and yellow bell peppers for about 2-3 minutes, until tender. Spoon the sautéed peppers over the chicken breasts.
- Spoon marinara sauce over the peppers and chicken, then top with shredded mozzarella, provolone, and additional Parmesan cheese.
- Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh basil, if desired, and serve immediately.
