Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 6 oz chorizo, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  • In a large skillet, heat olive oil over medium heat.
  • Add the chicken strips and cook until browned on all sides, about 5-7 minutes.
  • Push the chicken to the side of the skillet and add the chorizo slices. Cook until browned and cooked through, about 3-4 minutes.
  • Add the onion, garlic, and red bell pepper to the skillet, and cook until the vegetables are tender, about 5 minutes.
  • Sprinkle paprika, salt, and pepper over the chicken and vegetables. Stir to combine.
  • Serve hot and enjoy!

Notes

  • For extra heat, you can add a pinch of cayenne pepper or a diced jalapeño.
  • Serve with rice, couscous, or a simple green salad for a complete meal.
  • This dish can also be made with turkey or pork if preferred.
