  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Sauté the Vegetables:
    • In a large oven-safe skillet, heat the olive oil over medium heat.
    • Add the minced garlic and sauté until fragrant, about 1 minute.
    • Add the sliced mushrooms and cook until tender, about 5 minutes.
    • Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  3. Make the Creamy Sauce:
    • Pour in the heavy cream and bring it to a simmer.
    • Stir in the grated Parmesan cheese until the sauce thickens slightly.
  4. Combine and Bake:
    • Place the seasoned chicken breasts on top of the spinach and mushroom mixture in the skillet.
    • Sprinkle shredded mozzarella cheese over the chicken.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and golden.
  5. Serve:
    • Garnish with fresh parsley if desired, and serve hot.
