Chicken Veggie Burgers are a healthier, delicious alternative to traditional beef burgers. Packed with lean chicken, fresh veggies, and flavorful spices, they make for the perfect homemade burger, whether for a quick dinner or a weekend BBQ.

- 1 lb (450g) ground chicken breast or thighs
- 1/2 cup finely grated zucchini (squeeze out excess water)
- 1/2 cup finely grated carrot
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped onion
- 1/4 cup breadcrumbs (or use gluten-free breadcrumbs)
- 1 egg
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- 4 whole wheat or regular burger buns
- Lettuce, tomato, and other desired toppings (optional)
Instructions
- In a large mixing bowl, combine the ground chicken, grated zucchini, grated carrot, chopped red bell pepper, chopped onion, breadcrumbs, egg, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix until all ingredients are well combined.
- Divide the mixture into 4 equal portions and shape them into burger patties.
- Heat a non-stick skillet or grill pan over medium heat and lightly grease it with olive oil.
- Cook the patties for 5-6 minutes per side, or until they reach an internal temperature of 165°F (75°C) and are golden brown on the outside.
- Toast the burger buns lightly in the same pan, if desired.
- Assemble the burgers by placing a patty on the bottom half of each bun. Top with lettuce, tomato, or other desired toppings. Place the other half of the bun on top and serve.
Notes
- If the burger mixture feels too wet, add extra breadcrumbs until it holds together better.
- For extra flavor, you can add your favorite sauces like mustard or mayo to the burger buns.
- These patties can be made ahead and stored in the refrigerator for up to 24 hours before cooking.
