  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 4 cups prepared mashed potatoes

Instructions

  • Heat the olive oil and butter in a skillet over medium heat. Cook the chicken breasts until golden brown on both sides, about 5 minutes per side. Remove the chicken and set aside.
  • In the same skillet, whisk in the flour and cook for 1 minute, stirring constantly.
  • Slowly whisk in the chicken broth and bring the mixture to a simmer. Stir in the heavy cream and cook until the gravy thickens, about 3-5 minutes.
