Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup white rice
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large skillet, heat olive oil over medium-high heat.
  • Add chicken breast and cook until browned on both sides, about 5 minutes per side.
  • Add minced garlic and cook for another minute.
  • Stir in rice and chicken broth, bring to a boil.
  • Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked.
  • Stir in Parmesan cheese and season with salt and pepper.
  • Serve chicken over garlic Parmesan rice, garnished with fresh parsley.

Notes

  • You can add vegetables such as spinach or peas to the rice for extra color and nutrients.
  • If you prefer, you can use brown rice instead of white rice, but be sure to adjust the cooking time.
