This creamy and comforting Chicken with Potatoes in Cheese Sauce combines tender chicken breasts and perfectly roasted potatoes smothered in a rich, melted cheddar cheese sauce. A family-friendly dish that’s easy to prepare and sure to satisfy everyone at the table.

  • 4 chicken breasts
  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper, then place them in a baking dish.
  • In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth.
  • Gradually add the milk, stirring constantly until the sauce thickens.
  • Stir in the shredded cheddar cheese until melted and well combined.
  • Place the diced potatoes around the chicken breasts in the baking dish.
  • Pour the cheese sauce over the chicken and potatoes.
  • Cover the dish with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the potatoes are tender.

Notes

  • You can add some fresh herbs like rosemary or thyme for extra flavor.
  • To make the dish a little healthier, you can use light cheese or substitute half-and-half for the milk.
