- ¼ cup honey (raw preferred)
- 1 tablespoon tomato paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon chipotle chili powder
- ½ garlic clove, very finely chopped
- ¼ teaspoon salt
Instructions
- Cut the chicken breasts into bite-sized cubes (about 1-1.5 inches).
- In a bowl, whisk together honey, tomato paste, apple cider vinegar, chipotle chili powder, garlic, and salt to create the marinade.
- Place the chicken cubes in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill or a grill pan to medium-high heat. Thread the marinated chicken onto skewers.
- Grill the skewers for 5-7 minutes per side, or until the chicken is fully cooked and has an internal temperature of 165°F (74°C).
- Remove from the grill and let the skewers rest for a few minutes before serving.
Notes
- If you prefer a less spicy version, reduce the amount of chipotle chili powder to ½ teaspoon.
