Description

These Chipotle Honey Chicken Skewers are the perfect combination of smoky, spicy, and sweet. Marinated in a flavorful blend of chipotle chili powder, honey, and apple cider vinegar, the chicken becomes juicy and packed with flavor. Grilled to perfection, these skewers are ideal for a summer barbecue, a weeknight dinner, or a tasty appetizer that will impress your guests.

  • 1 lb boneless and skinless chicken breasts
  • ¼ cup honey (raw preferred)
  • 1 tablespoon tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon chipotle chili powder
  • ½ garlic clove, very finely chopped
  • ¼ teaspoon salt

Instructions

  • Cut the chicken breasts into bite-sized cubes (about 1-1.5 inches).
  • In a bowl, whisk together honey, tomato paste, apple cider vinegar, chipotle chili powder, garlic, and salt to create the marinade.
  • Place the chicken cubes in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • Preheat the grill or a grill pan to medium-high heat. Thread the marinated chicken onto skewers.
  • Grill the skewers for 5-7 minutes per side, or until the chicken is fully cooked and has an internal temperature of 165°F (74°C).
  • Remove from the grill and let the skewers rest for a few minutes before serving.

Notes

  • If you prefer a less spicy version, reduce the amount of chipotle chili powder to ½ teaspoon.
  • For an added touch, brush the chicken with a little extra honey during the last minute of grilling for a glossy finish and extra sweetness.
  • You can serve these skewers with a side of rice, grilled vegetables, or a simple salad.
