  • 1 cup butter (softened)
  • 2 (8-ounce) packages cream cheese (room temperature, softened)
  • 5 to 5 1/2 cups powdered sugar
  • 2 teaspoons vanilla bean paste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the oil, eggs, buttermilk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Slowly add the hot water to the batter, mixing until smooth. The batter will be thin.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Vanilla Frosting:
