Description

These Chocolate Coconut Balls are a delightful no-bake treat that combines the rich flavor of dark or semi-sweet chocolate with the sweetness of coconut and powdered sugar. Coated in a smooth chocolate shell, these bite-sized delights are perfect for parties, gift-giving, or satisfying your sweet tooth!

  • 2 cups shredded coconut (more if needed for rolling)
  • 1 ¾ cups powdered sugar
  • ½ cup sweetened condensed milk
  • 2 cups dark or semi-sweet melting wafers

Instructions

  • In a large mixing bowl, combine the shredded coconut and powdered sugar.
  • Add the sweetened condensed milk to the mixture and stir until fully combined. The mixture should be thick and sticky.
  • Roll the mixture into small balls, about 1 inch in diameter. If the mixture is too sticky, lightly coat your hands with a little shredded coconut.
  • Place the coconut balls on a baking sheet lined with parchment paper and chill in the refrigerator for 30-60 minutes to firm up.
  • While the coconut balls are chilling, melt the dark or semi-sweet melting wafers according to the package instructions, usually in a microwave or double boiler.
  • Once the coconut balls are chilled, dip each one into the melted chocolate, covering it completely. You can roll the balls in extra shredded coconut for an added coating or leave them plain.
  • Place the chocolate-covered coconut balls back on the parchment-lined baking sheet.
  • Refrigerate the coated balls for an additional 15-20 minutes to set the chocolate.
  • Once the chocolate is firm, the Chocolate Coconut Balls are ready to serve!

Notes

  • If you prefer a sweeter chocolate coating, you can substitute semi-sweet chocolate with milk chocolate.
  • For extra texture, you can add crushed nuts or dried fruit to the coconut mixture.
