These indulgent chocolate-covered cheesecake strawberries combine the sweetness of ripe strawberries with a creamy, rich cheesecake filling and a smooth chocolate coating. Perfect for a special treat or a fun dessert to impress guests!

  • 1 pound (about 1215) large strawberries, thoroughly rinsed and pat dry
  • 6 ounces (1 cup) semi-sweet chocolate chips
  • 4 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream, cold

Instructions

  • Prepare the strawberries: Rinse the strawberries and gently pat them dry with a paper towel. Make sure they’re completely dry so the chocolate will adhere better.
  • Make the cheesecake filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and cold heavy cream. Use a hand mixer to beat until smooth and creamy.
  • Fill the strawberries: Cut a small “X” at the top of each strawberry and carefully hollow out the center, creating space for the cheesecake filling.
  • Fill each strawberry with the cheesecake mixture, either by spooning it in or using a piping bag for more precision.
  • Melt the chocolate: In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring each time until fully melted and smooth.
  • Dip in chocolate: Hold each filled strawberry by the stem and dip it into the melted chocolate, coating the bottom half. Allow any excess chocolate to drip off.
  • Set the strawberries: Place the dipped strawberries on a parchment-lined baking sheet and allow them to set at room temperature for about 20 minutes, or refrigerate to speed up the process.

Notes

  • For extra flavor, you can add a pinch of salt to the cheesecake filling to balance the sweetness.
