- 1 pound (about 12–15) large strawberries, thoroughly rinsed and pat dry
- 6 ounces (1 cup) semi-sweet chocolate chips
- 4 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ¼ cup heavy cream, cold
Instructions
- Prepare the strawberries: Rinse the strawberries and gently pat them dry with a paper towel. Make sure they’re completely dry so the chocolate will adhere better.
- Make the cheesecake filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and cold heavy cream. Use a hand mixer to beat until smooth and creamy.
- Fill the strawberries: Cut a small “X” at the top of each strawberry and carefully hollow out the center, creating space for the cheesecake filling.
- Fill each strawberry with the cheesecake mixture, either by spooning it in or using a piping bag for more precision.
- Melt the chocolate: In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring each time until fully melted and smooth.
- Dip in chocolate: Hold each filled strawberry by the stem and dip it into the melted chocolate, coating the bottom half. Allow any excess chocolate to drip off.
- Set the strawberries: Place the dipped strawberries on a parchment-lined baking sheet and allow them to set at room temperature for about 20 minutes, or refrigerate to speed up the process.
Notes
- For extra flavor, you can add a pinch of salt to the cheesecake filling to balance the sweetness.
- Make sure the strawberries are completely dry before dipping them in chocolate to prevent the chocolate from seizing up.
