Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt 1/2 cup unsalted butter with 1 cup semisweet chocolate chips in 20-second intervals, stirring between each, until smooth. Allow the mixture to cool slightly.
- In a large mixing bowl, combine 1 cup granulated sugar and 1/2 cup brown sugar, then beat in the cooled chocolate mixture until smooth.
- Add 2 eggs and 1 tsp vanilla extract, mixing until well incorporated.
- In a separate bowl, whisk together 1 cup all-purpose flour, 1/4 cup unsweetened cocoa powder, 1/2 tsp baking powder, and 1/4 tsp salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Scoop tablespoon-sized balls of dough, then press a few chocolate chips or a small piece of chocolate into the center of each. Place each ball onto the prepared baking sheet, about 2 inches apart.
- Bake for 10-12 minutes, until the cookies are set around the edges but still soft in the center. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack.
