- 2 cups crushed Christmas cookies
- 1/2 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup Christmas cookie crumbs
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix together crushed Christmas cookies and melted butter. Press into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in eggs and vanilla until well combined. Fold in cookie crumbs.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake in the preheated oven for 40 minutes or until the center is almost set. Allow to cool.
- Refrigerate for at least 3 hours before serving.
Notes
- If you want a richer flavor, add a little cinnamon or nutmeg to the cheesecake mixture.
- You can use any holiday-themed cookies, such as gingerbread or sugar cookies, for the crust.
- Decorate with extra crushed cookies on top for a festive touch.
