These Churro Cheesecake Bars bring together the creamy richness of cheesecake with the cinnamon-sugar goodness of churros, creating a sweet treat with a delightful crunch and smooth filling.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup cinnamon sugar (for topping)
- 1/4 cup melted butter (for topping)
Instructions
- Preheat oven to 350°F.
- In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9×13 inch baking pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla extract, and mix well.
- Pour the cream cheese mixture over the crust.
- Bake for 25-30 minutes or until set.
- Cool completely in the refrigerator.
- Cut into bars, brush with melted butter, and sprinkle cinnamon sugar on top.

Notes
For an extra twist, add a drizzle of caramel or chocolate sauce before serving.
