These soft, fluffy muffins are a sweet twist on classic French toast. Coated in a delicious cinnamon-sugar mixture, they’re perfect for breakfast or a sweet treat any time of day. Easy to make and even easier to enjoy!

- 1/4 cup melted butter
- 1/2 cup sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 cup milk
- 1/2 cup sugar (for cinnamon-sugar mixture)
- 1 tsp cinnamon (for cinnamon-sugar mixture)
Instructions
- Preheat oven to 350°F (175°C) and grease muffin cups or line with muffin liners.
- In a large bowl, mix together melted butter, sugar, and egg until smooth and well combined.
- Add flour, baking powder, salt, and nutmeg. Stir until just combined (don’t overmix).
- Gradually add milk and mix until the batter is smooth and uniform.
- Spoon the batter into the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, mix together 1/2 cup sugar and 1 tsp cinnamon in a small bowl.
- Once muffins are done, remove them from the oven and immediately roll each muffin in the cinnamon-sugar mixture to coat.
- Serve warm and enjoy!
Notes
- These muffins are best served warm, but you can store them in an airtight container for a couple of days.
- For extra flavor, you can add a dash of vanilla extract to the batter.
- You can also try adding chopped nuts, such as pecans or walnuts, for a crunchy texture.
