Description

A hearty British comfort food classic made with juicy sausages, rich onion gravy, and creamy mashed potatoes. Served with peas and topped with parsley, this satisfying dish is a timeless favorite for any cozy meal.

For the Sausages & Gravy:

  • 1 tablespoon olive oil

  • 8 sausages (pork, beef, chicken, or plant-based)

  • 2 to 4 tablespoons butter

  • 2 medium white or yellow onions, sliced

  • ¼ cup all-purpose flour

  • ⅔ cup dry white wine

  • 2 cups beef stock

  • 2 teaspoons garlic powder

  • 1 teaspoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • Fine sea salt, to taste

  • Freshly ground black pepper, to taste

  • Finely chopped fresh parsley, for garnish

For Serving:

  • Mashed potatoes

  • Green peas


Instructions

  1. Cook the Sausages:

    • Heat olive oil in a large skillet over medium heat.

    • Add sausages and cook, turning occasionally, until browned and cooked through (10–12 minutes). Remove and set aside.

  2. Make the Gravy:

    • In the same pan, melt butter over medium heat.

    • Add sliced onions and sauté for 10–12 minutes, until caramelized and soft.

    • Stir in flour and cook for 1–2 minutes.

    • Slowly whisk in wine and beef stock.

    • Add garlic powder, balsamic vinegar, Dijon mustard, salt, and pepper. Simmer for 8–10 minutes, until thickened.

    • Return sausages to the skillet and let them heat through in the gravy for 2–3 minutes.

  3. Assemble the Dish:

    • Serve sausages over creamy mashed potatoes.

    • Spoon onion gravy over top.

    • Add green peas on the side and garnish with chopped parsley.

Notes

  • For alcohol-free version, substitute wine with more beef stock.

  • You can use any type of sausage—traditional British bangers if available.

  • Make mashed potatoes extra creamy with butter, cream, and a touch of garlic.
