Description

Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon sugar
  • 1 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup sweet pickles, chopped
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions

  • Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
  • In a large mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, and sugar. Mix until smooth.
  • Add the cooled macaroni, celery, red onion, green bell pepper, and sweet pickles to the bowl. Gently fold everything together until well coated.
  • Season with salt and pepper to taste. Adjust the dressing ingredients if desired.
  • Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  • Before serving, give the salad a good stir and garnish with fresh parsley, if desired.

Notes

For a protein boost, consider adding diced ham, chicken, or tuna. This salad can be made a day in advance for enhanced flavor.
