This Coconut Layer Cake is a moist and delicious dessert, packed with the tropical flavor of coconut and the richness of cream cheese frosting. Perfect for any celebration, it’s a sweet indulgence with a delightful crunch from walnuts (optional).


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups flaked coconut
  • 1/2 cup chopped walnuts (optional)
  • 1 recipe Cream Cheese Frosting (see recipe)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  • Alternately beat in the flour mixture with the buttermilk, mixing just until incorporated. Fold in the coconut and walnuts.
  • Pour the batter into the prepared pans.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow to cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
  • Once the cakes have cooled, frost with Cream Cheese Frosting and sprinkle additional coconut on top if desired.
  • Serve and enjoy!

Notes

  • If you prefer a nuttier flavor, increase the amount of walnuts.
  • Make sure the cake is fully cooled before frosting to prevent the frosting from melting.
