Description
This Coconut Layer Cake is a moist and delicious dessert, packed with the tropical flavor of coconut and the richness of cream cheese frosting. Perfect for any celebration, it’s a sweet indulgence with a delightful crunch from walnuts (optional).

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 1/2 cups flaked coconut
- 1/2 cup chopped walnuts (optional)
- 1 recipe Cream Cheese Frosting (see recipe)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Alternately beat in the flour mixture with the buttermilk, mixing just until incorporated. Fold in the coconut and walnuts.
- Pour the batter into the prepared pans.
- Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow to cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
- Once the cakes have cooled, frost with Cream Cheese Frosting and sprinkle additional coconut on top if desired.

Notes
- If you prefer a nuttier flavor, increase the amount of walnuts.
- Make sure the cake is fully cooled before frosting to prevent the frosting from melting.
