- 1 tablespoon instant espresso powder

Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- In a large bowl, beat the cream cheese and sugar together until smooth.
- Dissolve the espresso powder in 1 tablespoon of hot water and add it to the cream cheese mixture along with vanilla extract.
- Add the eggs one at a time, beating until just combined.
- Stir in sour cream and mix well.
- Pour the batter over the crust and bake for 50-55 minutes until the center is set.
- Let the cheesecake cool completely and refrigerate for at least 4 hours before serving.
