Description

A decadent Coffee Tiramisu Cake combining a tender vanilla cake soaked in strong coffee, layered with a rich espresso-infused mascarpone frosting. Finished with a dusting of cocoa powder, this dessert captures the classic tiramisu flavors in an elegant cake form.

Vanilla Cake:

  • 260g all-purpose flour

  • 2 tsp baking powder

  • ½ tsp kosher salt

  • 220g buttermilk, at room temperature

  • 1 tsp vanilla bean paste

  • 150g unsalted butter, at room temperature

  • 160g granulated sugar

  • 2 large eggs, at room temperature

Coffee Soak:

  • 50g strong coffee, cold

Espresso Mascarpone Frosting:

  • 230g mascarpone, cold

  • 1 ½ tsp espresso powder or fine instant coffee

  • 110g powdered sugar, sifted

  • ¼ tsp vanilla bean paste

  • Pinch of salt

  • 240g heavy cream, cold from the fridge

For dusting:

  • Cocoa powder


Instructions

For the Vanilla Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

  3. In a large bowl, beat butter and sugar until light and fluffy.

  4. Add eggs one at a time, beating well after each addition. Stir in vanilla bean paste.

  5. Alternately add the dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix until just combined.

  6. Divide batter evenly between pans and smooth tops.

  7. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.

  8. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Coffee Soak:

  1. Brew strong coffee and chill completely.

Espresso Mascarpone Frosting:

  1. In a bowl, whisk mascarpone with espresso powder, powdered sugar, vanilla bean paste, and salt until smooth.

  2. In a separate bowl, whip cold heavy cream to stiff peaks.

  3. Gently fold whipped cream into mascarpone mixture until smooth and combined.

Assembly:

  1. Place one cake layer on a serving plate.

  2. Brush generously with cold coffee soak.

  3. Spread a thick layer of espresso mascarpone frosting over the soaked cake.

  4. Place the second cake layer on top and repeat soaking and frosting steps.

  5. Finish by frosting the top and sides of the cake with remaining frosting.

  6. Dust the top lightly with cocoa powder before serving.

Notes

  • Use good quality espresso powder or instant coffee for best flavor.

  • Make sure mascarpone and cream are cold for best frosting texture.

  • Cake can be refrigerated for several hours or overnight to enhance flavor.
