- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup shredded cheese
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F.
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground beef, onion, and garlic until the meat is browned.
- Add cooked rice, diced tomatoes, salt, and pepper to the skillet.
- Stuff the bell peppers with the meat mixture and place them in a baking dish.
- Top each pepper with shredded cheese.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
Feel free to use different types of bell peppers for added color and flavor. You can also swap the ground beef for ground turkey or a vegetarian substitute.
