Description

These Colorful Stuffed Bell Peppers are packed with seasoned ground beef, rice, and tomatoes, topped with melted cheese. They make a hearty and vibrant meal that’s perfect for a family dinner!


Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 350°F.
  • Cut the tops off the bell peppers and remove the seeds.
  • In a skillet, cook the ground beef, onion, and garlic until the meat is browned.
  • Add cooked rice, diced tomatoes, salt, and pepper to the skillet.
  • Stuff the bell peppers with the meat mixture and place them in a baking dish.
  • Top each pepper with shredded cheese.
  • Cover with foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

Feel free to use different types of bell peppers for added color and flavor. You can also swap the ground beef for ground turkey or a vegetarian substitute.
