  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter, softened

  • 2 teaspoons lemon extract
  • 1/3 cup lemon juice
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  • In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, beat eggs, sugar, butter, vanilla extract, lemon extract, lemon juice, and vegetable oil until well combined.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined. Stir in lemon zest.
  • Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
