Corn Fritters

Description

Crispy and cheesy corn fritters that make a delightful snack or side dish. Perfectly golden and loaded with flavor!


Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Vegetable oil (for frying)

Instructions

  • Prepare the Corn:
    • If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw and drain it.
  • Mix the Batter:
    • In a large bowl, combine flour, baking powder, salt, pepper, and paprika.
    • In another bowl, whisk together the eggs and milk.
    • Add the wet ingredients to the dry ingredients and mix until just combined.
    • Fold in the corn kernels, cheddar cheese, and green onions.
  • Cook the Fritters:
    • Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
    • Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
    • Cook for 2-3 minutes on each side, or until golden brown and crispy. Drain on paper towels.
  • Serve:
    • Serve warm with a dollop of sour cream or a sprinkle of extra cheese if desired.

Notes

For a healthier option, bake the fritters at 375°F (190°C) for 15-20 minutes, flipping halfway through. Serve as a side dish or a snack.
