- 2 cups fresh or frozen corn kernels
- 1 cup all-purpose flour
- 1/2 cup shredded cheddar cheese
- 1/4 cup finely chopped green onions
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Vegetable oil (for frying)
Instructions
- Prepare the Corn:
- If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw and drain it.
- Mix the Batter:
- In a large bowl, combine flour, baking powder, salt, pepper, and paprika.
- In another bowl, whisk together the eggs and milk.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the corn kernels, cheddar cheese, and green onions.
- Cook the Fritters:
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
- Cook for 2-3 minutes on each side, or until golden brown and crispy. Drain on paper towels.
- Serve:
- Serve warm with a dollop of sour cream or a sprinkle of extra cheese if desired.
Notes
For a healthier option, bake the fritters at 375°F (190°C) for 15-20 minutes, flipping halfway through. Serve as a side dish or a snack.
