Description

A hearty and protein-packed Cottage Cheese Egg Bake loaded with savory turkey sausage, fresh vegetables, and sharp cheddar cheese. This easy-to-make casserole is perfect for a satisfying breakfast or brunch that will keep you energized all day.


Ingredients

  • 12 eggs

  • 1 lb turkey breakfast sausage, ground or removed from casing (or use chopped pre-cooked/frozen)

  • 1 tsp olive oil

  • 16 oz cottage cheese

  • 1.5 cups sharp cheddar cheese, shredded

  • 1/2 sweet onion, diced small

  • 2 cloves garlic, minced

  • 1 green bell pepper, diced small

  • 1 red bell pepper, diced small

  • 1/4 tsp salt

  • 1/4 tsp black pepper


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  • Heat olive oil in a skillet over medium heat. Add turkey sausage and cook until browned and cooked through. Remove from heat.

  • In the same skillet, sauté onion, garlic, green and red bell peppers until softened, about 5 minutes. Remove from heat.

  • In a large mixing bowl, whisk eggs until well combined. Stir in cottage cheese, shredded cheddar, cooked sausage, and sautéed vegetables. Season with salt and black pepper.

  • Pour mixture into the prepared baking dish and spread evenly.

  • Bake for 35–40 minutes, or until the egg bake is set and the top is lightly golden.

  • Remove from oven and let cool for a few minutes before slicing and serving.

Notes

  • Use cooked or pre-cooked sausage for convenience.

  • Add your favorite herbs or spices for extra flavor, like paprika or parsley.
