Ingredients

12 eggs

1 lb turkey breakfast sausage, ground or removed from casing (or use chopped pre-cooked/frozen)

1 tsp olive oil

16 oz cottage cheese

1.5 cups sharp cheddar cheese, shredded

1/2 sweet onion, diced small

2 cloves garlic, minced

1 green bell pepper, diced small

1 red bell pepper, diced small

1/4 tsp salt

1/4 tsp black pepper
Instructions

Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

Heat olive oil in a skillet over medium heat. Add turkey sausage and cook until browned and cooked through. Remove from heat.

In the same skillet, sauté onion, garlic, green and red bell peppers until softened, about 5 minutes. Remove from heat.

In a large mixing bowl, whisk eggs until well combined. Stir in cottage cheese, shredded cheddar, cooked sausage, and sautéed vegetables. Season with salt and black pepper.

Pour mixture into the prepared baking dish and spread evenly.

Bake for 35–40 minutes, or until the egg bake is set and the top is lightly golden.
