Ingredients
- 2 large chicken breasts (boneless, skinless)
- 8 oz linguine pasta
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Freshly grated Parmesan cheese, for garnish
Instructions
-
Cook the pasta: In a large pot of boiling salted water, cook the linguine pasta according to the package instructions until al dente. Drain and set aside.
-
Cook the chicken: Season the chicken breasts with salt, pepper, smoked paprika, and onion powder. Heat 1 tablespoon of butter in a large skillet over medium heat. Cook the chicken breasts for 6-7 minutes per side, or until cooked through. Remove the chicken from the skillet, and slice it into strips once it’s rested.
-
Prepare the Cowboy Butter Sauce: In the same skillet, melt the remaining butter over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant. Add the chicken broth and bring to a simmer. Stir in the fresh parsley, thyme, lemon juice, crushed red pepper flakes, and adjust seasoning with salt and pepper to taste.
-
Combine: Add the cooked linguine pasta and sliced chicken into the skillet, tossing everything to coat in the sauce.
-
Serve: Garnish with freshly grated Parmesan cheese and serve immediately.
Notes
- For a spicier kick, increase the amount of crushed red pepper flakes or add a pinch of cayenne pepper.
- You can substitute the chicken with shrimp or another protein if desired.
- If you want a thicker sauce, reduce the chicken broth by half or add a splash of heavy cream.
