Cowboy Butter Chicken Linguine is the ultimate comfort dish with tender chicken breasts, linguine pasta, and a creamy, flavorful butter sauce made with garlic, smoked paprika, and fresh herbs. This dish is perfect for a weeknight dinner, bringing bold and comforting flavors to the table in just 30 minutes.

  • 2 large chicken breasts (boneless, skinless)
  • 8 oz linguine pasta
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Freshly grated Parmesan cheese, for garnish

Instructions

  • Cook the pasta: In a large pot of boiling salted water, cook the linguine pasta according to the package instructions until al dente. Drain and set aside.

  • Cook the chicken: Season the chicken breasts with salt, pepper, smoked paprika, and onion powder. Heat 1 tablespoon of butter in a large skillet over medium heat. Cook the chicken breasts for 6-7 minutes per side, or until cooked through. Remove the chicken from the skillet, and slice it into strips once it’s rested.

  • Prepare the Cowboy Butter Sauce: In the same skillet, melt the remaining butter over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant. Add the chicken broth and bring to a simmer. Stir in the fresh parsley, thyme, lemon juice, crushed red pepper flakes, and adjust seasoning with salt and pepper to taste.

  • Combine: Add the cooked linguine pasta and sliced chicken into the skillet, tossing everything to coat in the sauce.

  • Serve: Garnish with freshly grated Parmesan cheese and serve immediately.

Notes

  • For a spicier kick, increase the amount of crushed red pepper flakes or add a pinch of cayenne pepper.
  • You can substitute the chicken with shrimp or another protein if desired.
  • If you want a thicker sauce, reduce the chicken broth by half or add a splash of heavy cream.
