- ½ cup honey
- 2 tablespoons extra virgin olive oil
- 3 sprigs fresh thyme

Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.
- Make the Honey Mustard Sauce: In a small bowl, whisk together the Dijon mustard, honey, and olive oil until smooth and well-combined.
- Cook the Chicken: Heat a large oven-safe skillet over medium heat. Add the chicken thighs and cook for 4-5 minutes on each side, until golden brown.
- Add the Sauce: Pour the honey mustard sauce over the chicken thighs. Add the fresh thyme sprigs to the skillet. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Garnish and Serve: Remove the skillet from the oven and discard the thyme sprigs. Garnish with freshly chopped parsley if desired. Serve the chicken with the sauce from the pan over rice, vegetables, or your favorite side dish.
