This delightful cranberry orange bread is a perfect balance of sweet and tart, with the citrusy zing of fresh orange zest and juice paired with the tangy sweetness of cranberries. A perfect treat for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup orange juice
  • 1 tablespoon grated orange zest
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • 1 1/2 cups fresh or frozen cranberries, coarsely chopped

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  • In a medium bowl, mix together the flour, sugar, baking powder, salt, and baking soda. Stir in the orange juice, orange zest, melted butter, and egg.
  • Fold in the cranberries and pour the batter into the prepared loaf pan.
  • Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

Notes

  • You can substitute fresh cranberries with dried cranberries if preferred.
  • For a sweeter version, you can add a glaze by mixing powdered sugar with orange juice and drizzling it over the cooled bread.
