Description

This refreshing and hearty chicken salad combines tender chicken, crunchy pecans, sweet dried cranberries, and a creamy dressing with a hint of honey and lemon. Perfect for a light meal, a snack, or as a sandwich filling!


Ingredients

  • Cooked boneless skinless chicken breast
  • Dried cranberries (roughly chopped)
  • Pecans (chopped)
  • 1 stalk celery (diced)
  • 2 green onions (chopped)
  • Mayonnaise
  • Lemon juice
  • Honey
  • Salt
  • Garlic powder
  • Black pepper

Instructions

  1. Chop the chicken, pecans, cranberries, celery, and green onions into small, bite-sized pieces.
  2. In a large bowl, combine the chicken, pecans, cranberries, celery, and green onions. Mix well.
  3. In a separate small bowl, whisk together mayonnaise, lemon juice, honey, salt, garlic powder, and black pepper until well combined.
  4. Pour the dressing mixture over the chicken mixture and stir to evenly coat.
  5. Scoop and enjoy! Serve it in croissants, fluffy rolls, or enjoy it on its own.

Optional Toasting of Pecans:

  1. Place pecans in a pan over medium heat and spray with cooking oil.
  2. Toast for 3-4 minutes, stirring frequently.
  3. Move the toasted pecans to a cutting board and chop them.
