- Dried cranberries (roughly chopped)
- Pecans (chopped)
- 1 stalk celery (diced)
- 2 green onions (chopped)
- Mayonnaise
- Lemon juice
- Honey
- Salt
- Garlic powder
- Black pepper
Instructions
- Chop the chicken, pecans, cranberries, celery, and green onions into small, bite-sized pieces.
- In a large bowl, combine the chicken, pecans, cranberries, celery, and green onions. Mix well.
- In a separate small bowl, whisk together mayonnaise, lemon juice, honey, salt, garlic powder, and black pepper until well combined.
- Pour the dressing mixture over the chicken mixture and stir to evenly coat.
- Scoop and enjoy! Serve it in croissants, fluffy rolls, or enjoy it on its own.
Optional Toasting of Pecans:
- Place pecans in a pan over medium heat and spray with cooking oil.
- Toast for 3-4 minutes, stirring frequently.
- Move the toasted pecans to a cutting board and chop them.
