A comforting dish that brings together succulent chicken breasts coated with rich and creamy Boursin cheese, served over fluffy mashed potatoes with a side of sweet green peas. This easy-to-make recipe is perfect for a weeknight dinner.

- 4 boneless, skinless chicken breasts
- 1 package of Boursin cheese (garlic & fine herbs)
- 1 cup of chicken broth
- 1 cup of frozen green peas
- 4 large potatoes
- 1/2 cup of milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper, then place in a baking dish.
- Spread Boursin cheese over each chicken breast.
- Pour chicken broth into the baking dish.
- Bake in the oven for 25-30 minutes or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- In the meantime, boil potatoes in a pot of salted water until tender (about 15-20 minutes).
- Drain potatoes and mash them with milk, salt, and pepper until smooth and creamy.
- Steam green peas in a separate pot or microwave until heated through (about 3-5 minutes).
- Serve the creamy Boursin chicken over mashed potatoes with green peas on the side.
Notes
- For a richer flavor, you can add more Boursin cheese or a splash of cream to the mashed potatoes.
- You can substitute the green peas with other vegetables such as broccoli or asparagus.
- Make sure the chicken breasts are cooked through before serving (check with a meat thermometer).
