Ingredients
Scale
- 1 pint cherry or grape tomatoes, halved
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 (8-ounce) burrata cheese ball
- 1/2 cup basil pesto (store-bought or homemade)
- Fresh basil leaves, for garnish
- Balsamic glaze, for drizzling (optional)
- Crostini or crusty bread, for serving
Instructions
- Roast the tomatoes: Preheat your oven to 400°F (200°C). Place the halved cherry tomatoes on a baking sheet. Drizzle with olive oil, then sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly. Roast for 15-20 minutes, or until the tomatoes are soft, slightly caramelized, and bursting. Remove from the oven and set aside.
- Assemble the dish: Place the burrata cheese ball in the center of a serving platter. Spoon the fresh pesto generously around the burrata, creating a vibrant base. Top with the roasted cherry tomatoes, allowing their juices to mix with the pesto.
- Garnish and serve: Drizzle the dish with balsamic glaze for added sweetness (optional). Garnish with fresh basil leaves for a pop of color. Serve immediately with toasted crostini or slices of crusty bread for dipping.
Notes
- If you’re making homemade pesto, use fresh basil and extra virgin olive oil for the best flavor.
- You can add a sprinkle of toasted pine nuts or grated Parmesan for extra richness.
