This creamy burrata with fresh pesto and roasted cherry tomatoes is a vibrant and flavorful appetizer that combines the richness of burrata cheese with the freshness of basil pesto and the sweetness of roasted tomatoes. A perfect dish to impress guests at any gathering, or simply to enjoy as a light and delicious starter.

  • 1 pint cherry or grape tomatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 (8-ounce) burrata cheese ball
  • 1/2 cup basil pesto (store-bought or homemade)
  • Fresh basil leaves, for garnish
  • Balsamic glaze, for drizzling (optional)
  • Crostini or crusty bread, for serving

Instructions

  • Roast the tomatoes: Preheat your oven to 400°F (200°C). Place the halved cherry tomatoes on a baking sheet. Drizzle with olive oil, then sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly. Roast for 15-20 minutes, or until the tomatoes are soft, slightly caramelized, and bursting. Remove from the oven and set aside.
  • Assemble the dish: Place the burrata cheese ball in the center of a serving platter. Spoon the fresh pesto generously around the burrata, creating a vibrant base. Top with the roasted cherry tomatoes, allowing their juices to mix with the pesto.
  • Garnish and serve: Drizzle the dish with balsamic glaze for added sweetness (optional). Garnish with fresh basil leaves for a pop of color. Serve immediately with toasted crostini or slices of crusty bread for dipping.
