- 8 oz fettuccine
- 2 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook fettuccine according to package instructions. Drain and set aside.
- Season chicken breasts with Cajun seasoning.
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken breasts and cook until no longer pink, about 5-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add bell peppers and onion. Cook until vegetables are tender, about 5 minutes.
- Slice cooked chicken breasts and add back to the skillet.
- Pour in heavy cream and Parmesan cheese. Stir until well combined and heated through.
- Season with salt and pepper to taste.
- Serve the creamy Cajun chicken mixture over cooked fettuccine.
- Garnish with chopped parsley.
