This Creamy Cajun Chicken Pasta is a flavorful and rich dish that combines seasoned chicken, vibrant vegetables, and a creamy, cheesy sauce. Perfect for a comforting dinner, this dish brings a bit of Cajun heat balanced with creamy goodness and a satisfying texture from the fettuccine.


Ingredients

  • 8 oz fettuccine
  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Cook fettuccine according to package instructions. Drain and set aside.
  • Season chicken breasts with Cajun seasoning.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add chicken breasts and cook until no longer pink, about 5-7 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add bell peppers and onion. Cook until vegetables are tender, about 5 minutes.
  • Slice cooked chicken breasts and add back to the skillet.
  • Pour in heavy cream and Parmesan cheese. Stir until well combined and heated through.
  • Season with salt and pepper to taste.
  • Serve the creamy Cajun chicken mixture over cooked fettuccine.
  • Garnish with chopped parsley.

Notes

  • You can substitute the fettuccine with any pasta of your choice, such as penne or spaghetti.
  • Add more Cajun seasoning for extra heat.
  • For a lighter version, you can use half-and-half instead of heavy cream.
