Description

This Creamy Cajun Spiced Chicken Salad is a bold and flavorful twist on a classic. Tender chicken breast, crunchy almonds, and a kick of Cajun seasoning, all tossed in a creamy dressing, make for the perfect salad or sandwich filling!


Ingredients

  • 2 cans Chunk Chicken Breast
  • 1/2 cup Chopped Almonds
  • 2 stalks Celery, chopped
  • 1 Crisp Red or Green Apple, diced
  • 2 tsp Cajun Seasoning
  • 1 tbsp Dried Parsley
  • 4 tbsp Mayonnaise or Miracle Whip
  • 2 tbsp Sour Cream

Instructions

  • Prepare the Chicken:

    • Drain and shred the chunk chicken breast in a large mixing bowl.
  • Add the Veggies and Fruit:

    • Chop the celery, dice the apple, and add them to the chicken. Stir to combine.
  • Season the Salad:

    • Sprinkle the Cajun seasoning and dried parsley over the chicken mixture. Add the mayonnaise (or Miracle Whip) and sour cream. Stir everything together until well-coated and combined.
  • Taste and Adjust:

    • Taste the chicken salad and add additional Cajun seasoning, salt, or pepper as needed.
  • Chill and Serve:

    • Chill the salad in the fridge for about 30 minutes before serving for the best flavor. Serve on a bed of lettuce, in a sandwich, or with crackers.

Notes

  • If you prefer more crunch, you can add diced bell peppers or cucumbers.
  • Adjust the amount of Cajun seasoning based on your desired spice level.
  • For a lighter version, you can use Greek yogurt instead of sour cream.
