Ingredients
-
12 ounces egg noodles
-
¼ cup butter
-
½ medium diced white onion
-
3 cloves minced garlic
-
¼ cup all-purpose flour
-
2 cups chicken broth
-
2 cups milk
-
¼ teaspoon salt
-
¼ teaspoon black pepper
-
2 cups frozen peas
-
1 pound cooked diced chicken
-
2 cups shredded cheddar cheese
-
1 cup crushed Ritz crackers
-
¼ cup grated parmesan cheese
-
2–3 teaspoons olive oil
Instructions
-
Preheat the oven to 350°F (175°C).
-
Cook the egg noodles according to package directions. Drain and set aside.
-
In a large skillet, melt butter over medium heat. Add diced onion and minced garlic and cook until softened, about 3-4 minutes.
-
Stir in flour and cook for 1-2 minutes to form a roux.
-
Gradually whisk in the chicken broth and milk, bringing the mixture to a simmer. Cook for about 5-7 minutes, stirring occasionally, until the sauce thickens.
-
Add salt and pepper to taste, then stir in the frozen peas, cooked chicken, and shredded cheddar cheese until the cheese is melted and everything is well combined.
-
In a greased casserole dish, combine the cooked egg noodles and the creamy chicken mixture. Mix well.
-
In a small bowl, combine crushed Ritz crackers, grated parmesan cheese, and olive oil. Sprinkle this mixture over the casserole.
-
Bake for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
-
Let it cool for a few minutes before serving.
Notes
-
For added flavor, you can mix in some herbs like thyme or rosemary.
-
To make the casserole ahead of time, assemble it and store it in the fridge. Bake when ready to serve.
