Description

This Creamy Chicken Casserole is the ultimate comfort food! With tender egg noodles, savory chicken, creamy sauce, and a crunchy Ritz cracker topping, it’s the perfect meal for cozy nights with family and friends.


Ingredients

  • 12 ounces egg noodles

  • ¼ cup butter

  • ½ medium diced white onion

  • 3 cloves minced garlic

  • ¼ cup all-purpose flour

  • 2 cups chicken broth

  • 2 cups milk

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 cups frozen peas

  • 1 pound cooked diced chicken

  • 2 cups shredded cheddar cheese

  • 1 cup crushed Ritz crackers

  • ¼ cup grated parmesan cheese

  • 23 teaspoons olive oil


Instructions

  • Preheat the oven to 350°F (175°C).

  • Cook the egg noodles according to package directions. Drain and set aside.

  • In a large skillet, melt butter over medium heat. Add diced onion and minced garlic and cook until softened, about 3-4 minutes.

  • Stir in flour and cook for 1-2 minutes to form a roux.

  • Gradually whisk in the chicken broth and milk, bringing the mixture to a simmer. Cook for about 5-7 minutes, stirring occasionally, until the sauce thickens.

  • Add salt and pepper to taste, then stir in the frozen peas, cooked chicken, and shredded cheddar cheese until the cheese is melted and everything is well combined.

  • In a greased casserole dish, combine the cooked egg noodles and the creamy chicken mixture. Mix well.

  • In a small bowl, combine crushed Ritz crackers, grated parmesan cheese, and olive oil. Sprinkle this mixture over the casserole.

  • Bake for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.

  • Let it cool for a few minutes before serving.

Notes

  • For added flavor, you can mix in some herbs like thyme or rosemary.

  • To make the casserole ahead of time, assemble it and store it in the fridge. Bake when ready to serve.
