Description

This Creamy Chicken Chorizo Pasta combines the savory flavors of spicy chorizo, tender chicken, and a rich, creamy sauce. A delicious and hearty dish perfect for a quick weeknight dinner.


Ingredients

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 8 oz chorizo, sliced
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chorizo and cook until browned. Remove from skillet.
  • Add chicken to the skillet and cook until no longer pink. Add onion, garlic, and paprika. Cook until onion is soft.
  • Pour in chicken broth and heavy cream. Bring to a simmer and let it thicken.
  • Add cooked pasta and chorizo to the skillet. Stir until well combined. Season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

For extra flavor, sprinkle with grated Parmesan cheese or add a dash of red pepper flakes for a spicy kick. You can also substitute the chorizo with sausage for a different taste.
