- 8 oz penne pasta
- 1 tbsp olive oil
- 8 oz chorizo, sliced
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chorizo and cook until browned. Remove from skillet.
- Add chicken to the skillet and cook until no longer pink. Add onion, garlic, and paprika. Cook until onion is soft.
- Pour in chicken broth and heavy cream. Bring to a simmer and let it thicken.
- Add cooked pasta and chorizo to the skillet. Stir until well combined. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, sprinkle with grated Parmesan cheese or add a dash of red pepper flakes for a spicy kick. You can also substitute the chorizo with sausage for a different taste.
